Cucumbers with Miso Tahini Dressing

Sometimes all you need for a salad is the cucumbers. But honestly, I would put this dressing over just about any salad or cool vegetable. I could not stop picking at the bowl.

This works best with a Persian or English cucumber – something with smaller seeds that’s less watery. Cut it into thick sticks, salt and place in a strainer to release some water, and then toss with this incredible dressing: whisk together miso paste, rice vinegar, tahini, and water. Garnish with black sesame seeds and scallions. (I was out of scallions but the black sesame seeds are the more important accoutrement because they make the presentation. In fact, I used black and white sesame seeds – watch out!)
